Ricotta Pancakes

These are the best pancakes in the universe.

Ingredients

  1. 4 large eggs, separated
  2. 2 cups ricotta cheese
  3. 2/3 cups sour cream
  4. 1 1/3 cups all purpose flour
  5. 1 tablespoon baking powder
  6. 1/2 teaspoon salt
  7. 1/2 teaspoon baking soda
  8. 1 1/2 cups whole milk
  9. melted butter
  10. maple syrup (from New Hampshire, of course.)

Optional Ingredients:

  1. 1/2 teaspoon grated lemon zest
  2. 1 tablespoon vanilla (or more)

Directions:

  1. Whisk yolks, ricotta, and sour cream in large bowl to blend.
  2. Whisk flour, baking power, salt, and baking soda in another large bowl to blend.
  3. Add flour mixture to yolk mixture and stir until combined.
  4. Stir in milk.
  5. Stri in optional lemon zest and/or vanilla
  6. Beat whites to soft peaks in another large bowl (electric mixer OK on medium speed).
  7. Fold beaten whites into batter.
  8. Use 2 tablespoons batter for each pancake (cook time is about 3 minutes/side).

These go well with Sauteed Apples
